The wonder food tofu

Popularly known as farmer's cheese tofu is coagulated soy milk. It is a highly nutritious protein, vitamin, mineral rich and low fat food. It's nutrient contents include tryptophan, calcium, manganese, iron, proteins, etc. Regular intake of tofu can reduce bad cholesterol, triglyceride levels, tendency of platelets to form blood clots and raise good cholesterol levels. 


It comes in regular, soft and firm varieties depending upon its texture and can be used in preparing delicious recipes. Here is a very popular dish based on tofu. 

Marinated baked tofu


Ingredients

1. Cubed tofu (firm)    - 1 cup
2. Tamari                     - 1/2 cup
3. Water                      - 1 cup
4. Grated ginger          - 1 tbsp
5. Minced garlic          - 2-3 tbpsp
6. Olive oil                  - 1 tbsp
7. Sesame oil               - 1 tbsp
8. Rice vinegar            - 1 tbsp

Method


Combine the ingredients of marinade, i.e., tamari, water, ginger, garlic, olive oil, sesame oil and rice vinegar in a container. Add cubed tofu to the marinade and store in the refrigerator for a day or two. Place the tofu in a single layer on a pregreased baking dish. Top it with ginger, garlic from the marinade. Bake at 350 degrees for about 30-35 minutes or till crispy brown, flipping it over once in the process.


Note


1. Marinade can be used again.


2. Tamari is a slightly thicker version of soy sauce. It has many health  benifits like supplying vit B3, manganese, protein, amino acid and tryptophan to the body.  Tryptophan provides nitrogen balance besides helping production of Serotonin. Serotonin, in turn assists in regulating sleep patterns and stabilizing mood.
